The Perfect Guide to Making the Best Steel Cut Oats

Steel-cut oats are a popular breakfast option known for their hearty texture and numerous health benefits. Unlike rolled or instant oats, steel-cut oats are minimally processed, which means they retain more of their natural nutrients and provide a satisfying, chewy texture. In this blog post, I am sharing my top tips to make the best steel-cut oats that will delight your taste buds! You may never go back to regular old oats again.




Step 1: Choosing the Right Steel Cut Oats

The first step in making the best steel-cut oats is selecting high-quality oats. Look for organic, whole grain steel-cut oats from a reputable brand. These oats are less likely to contain additives and will ensure a better taste and texture.


Step 2: Use Almond Milk

Using a combination of almond milk and water (or all almond milk). Experiment with different ratios to find the perfect balance that suits your taste.


While regular milk or just water are a common choices for cooking steel-cut oats, using almond milk as a liquid alternative can elevate the flavor profile of your oats. Here's why:

  1. Creaminess and Texture: Almond milk has a naturally creamy consistency that adds a velvety texture to your oats. The richness of almond milk gives the oats a luscious mouthfeel, making them even more enjoyable to eat.

  2. Nutty and Mildly Sweet Flavor: Almond milk imparts a delicate nutty flavor to your oats, which complements the earthiness of steel-cut oats beautifully. This subtle hint of sweetness enhances the overall taste without overpowering the oats' natural flavor.

  3. Dairy-Free and Vegan Option: Almond milk is a fantastic choice for those who follow a dairy-free or vegan lifestyle. It provides a plant-based alternative that still offers a satisfyingly creamy result, making it suitable for a wider range of dietary preferences.

Step 3: Ratios for steel cut oats

For each cup of steel-cut oats, use approximately 3 1/2 - 4 cups of liquid. I like using 1/2 almond milk and 1/2 water.



Step 4: The Cooking Process.

In a medium-sized saucepan, bring the almond milk and water to a boil over medium heat - when using milk it has a tendency to boil over - so be sure to watch it carefully; I've found that laying a wooden spoon on the top of the pot helps because it acts as a repellant to the liquid. Add the steel-cut oats, reduce the heat to low, and simmer uncovered for about 20-30 minutes, stirring occasionally. Adjust the cooking time based on your desired consistency—less time for chewier oats, and more time for creamier oats. Just remember - patience really is a virtue. While rolled oats are quick, easy and convenient, steel cut takes time - and the time is always worth it. I like to meal prep a huge batch of steel cut on Sunday and then eat it throughout the week.



Step 5: Flavoring and Toppings

Once your steel-cut oats are cooked to perfection, it's time to add some flavor and texture. Customize your bowl with a variety of toppings, such as fresh or dried fruits, nuts, seeds, honey, maple syrup, cinnamon, or nut butter. These additions will not only enhance the taste but also provide additional nutrients and a delightful presentation. My favorite combination as of late is pure maple syrup, bananas, blueberries and CREAM!


Step 7: Storage and Reheating Steel-cut oats

Steel cut oats can be made in advance and stored in the refrigerator for up to five days. Portion the cooked oats into airtight containers and refrigerate. When ready to enjoy, simply reheat the desired portion in the microwave or on the stovetop with a splash of liquid to restore the desired consistency.
