The ONLY Protein Ball Recipe You Need

I've made a lot of protein ball recipes in my day. Unfortunately, I've also spent a lot of money on specialty ingredients and butters to make the so called "fancy" or "healthier" ones - and guess what - they sit in my refrigerator - not good enough to eat and then after a few weeks go by (once I've forgotten the amount of money I spent) I eventually throw them out - uneaten.
I ALWAYS come back to this one. I can't seem to get enough (maybe that's not such a good thing since they are essentially a fat bomb - buuuut that's another post for another day). Not only is this recipe my absolute favorite by way of flavor - but it is a basic recipe so one ingredient swap and you still have a fantastic, flavorful protein ball that you will actually eat and love! The best part?? You know I'll go there - theme these for ANY holiday!
KIMBERLY'S PROTEIN BALLS
2 1/4 cup old fashioned oats
1 cup peanut butter
2 TBL unrefined virgin coconut oil
2/3 cup honey or pure maple syrup
1 scoop vanilla protein powder
1-2 scoops collagen peptides (optional)
1/4 cup ground flax seeds
1TBL chia seeds
1 tsp vanilla
dash of sea salt
1 cup mini chocolate chips (I like Lily's sugar free)
Pulse oats in a blender to slightly break them down. Combine all ingredients except chocolate chips in a mixer. Scrape down edges and add chocolate chips. Roll into 1 inch balls and refrigerate or freeze.
Makes about 24 balls.
Approximate Macros per ball: C-15, F-10, P-5
SUBSTITUTIONS...
1. Peanut Butter Chocolate Pretzel: swap out the flax and chia for 1/3 cup crushed pretzels
2. Almond Joy: Use almond butter in place of peanut butter, replace flax and chia with 1/3 cup cocoa powder, and use coconut flavor instead of vanilla. Roll in toasted coconut!
3. Peppermint chocolate: replace flax and chia with 1/3 cup cocoa powder, instead of vanilla use peppermint flavoring (or add a drop or two of peppermint essential oil), and roll in candy canes!
4. Chocolate Peanut Butter: replace flax and chia with 1/3 cup cocoa powder and instead of chocolate chips use peanut butter chips!
