Ingredients:

  • 1/2 cup butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1/4 cup buttermilk

  • 1/4 cup sour cream

  • 3 VERY ripe bananas

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp nutmeg

  • 2 cups all purpose flour

  • 1/2 cup chopped pecans or walnuts (optional)


Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with cooking spray or butter and set aside.

  2. In the bowl of an electric mixer, cream the butter and sugar together until light and fluffy. Beat in the egg, buttermilk, sour cream, vanilla and bananas (no need to pre-mash as the mixer will break them down for you).

  3. Add the baking soda, salt, cinnamon and nutmeg, and stir.

  4. Add the flour, mixing just until incorporated.

  5. Fold in the chopped nuts, if using.

  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  7. Bake for 55-60 minutes or until a toothpick inserted into the center of the bread comes out clean.

  8. Allow the banana bread to cool in the pan for 10-15 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
