St Patrick's Day Sugar Cookies

Not only do they pack a WOW factor, these St. Patrick's Day cookies are so incredibly delicious you may find yourself doing a leprechaun jig while eating them!
You've probably know by now that I absolutely love a holiday theme and I make some sort of cookie for each holiday. Sugar cookies are a tasty option, perfect for ANY holiday.
I've used the freezer flat method before and absolutely love it for a number of reasons.
REASONS TO USE THE FREEZER FLAT SUGAR COOKIE FROSTING METHOD:
EASY! Although it looks complicated - it's not!
Delicious. We love royal icing, but it's complicated, messy, and hard so this frosting is a nice change - fluffly and so yummy.
Uses less frosting.
It's satisfyingly cool - directly from the teenagers mouth
Clean up is a breeze - again royal frosting is fun - but it dries and hardens and is an absolute mess whenever we make it. With the freezer flat method we use disposable piping bags and it's easy to wipe up if there are spills and drips.
The frosting is essentially buttercream. Here's what you'll need:
1/2 cup butter, softened
2 cups powdered sugar
1/2 tsp vanilla
1-2 TBL heavy cream
Pinch of salt
Cream butter. Add in powdered sugar. Once mixed, slowly add in heavy cream, vanilla, and salt. Beat for 3-5 minutes. The frosting should get lighter in color and fluffy.
TIPS FOR SUGAR COOKIE FREEZER FLAT METHOD FROSTING:
1. Make sure your butter is soft/room temp.
2. Sift the powdered sugar
3. Make sure to beat until fluffly!
4. This last step I learned from a cake maker - before coloring and placing into piping bags, stir with a wooden spoon to remove air bubbles. For the freezer flat method this step is crucial because you don't want air bubbles when you flip your cookies upside down and press the frosting to the edge.
SUGAR COOKIE FREEZER FLAT METHOD FROSTING HOW TO:
Line a baking sheet with wax paper and line up your cookies. Place them in the freezer while you prep your frosting.
Color frosting and scoop each color into separate disposable piping bags. Then, lay out plastic wrap and pipe each color in a line. Roll it up, snip one end and slide into another disposable piping bag. (Click HERE for an Instagram Reel on this process).
Once the frosting is ready, pull your cookies from the freezer and pipe a blob onto the center of each cookie. Flip the cookies over and press the frosting to the edge. Place the cookies back into the freezer for at least 5 minutes.
Peel the cookies off the wax paper and vioala - amazing looking (and delicious) cookies. You can certainly top with sprinkles at this point if desired. If you find that your cookies are sticking to the wax paper as you peel them off the wax paper, place them back into the freezer for a few minutes.
