Snack Peppers with Cream Cheese for Spring

Snack peppers are a delicious and healthy snack that are small, colorful and the perfect size for snacking, plus they are packed with flavor and nutrients. YAY! We love those bonus healthy items (especially when we want to spread them with cream cheese goodness).
Snack peppers come in a variety of colors, including red, yellow, orange, and green. They are a type of sweet pepper, which means they are not spicy like their hot pepper counterparts. They are also known as mini peppers or sweet snacking peppers.
One of the main benefits of snack peppers is their nutritional value. They are low in calories and high in vitamins and minerals. One serving of snack peppers (about 10-12 peppers) contains only around 30 calories and provides a good source of vitamin C, vitamin A, and fiber. They are also rich in antioxidants, which can help protect the body against free radicals and prevent disease.
Snack peppers are also incredibly versatile. They can be eaten raw, roasted, grilled, or sautéed. I love putting them in eggs along with onions! They make a great addition to salads, sandwiches, and wraps, or they can be stuffed with a variety of fillings, such as cheese, hummus, or tuna salad. They can even be pickled or used in salsa.
If you're looking for a fun and creative way to incorporate snack peppers into your Easter celebration, you can try making "carrots" out of orange snack peppers. The creamy, tangy flavor of cream cheese pairs perfectly with the sweetness of the snack peppers, making for a delicious and satisfying snack. Plus, the bright orange color of the "carrots" makes them a festive addition to any Easter table.
Here's how:
Choose firm, glossy orange snack peppers.
Slice peppers in half and remove the stem and seeds.
Spread the inside with your favorite cream cheese spread (I used Einstein Bros Garden Veggie Shmear)
Top with parsley, cilantro or broccoli to create the stem
Not only are these "carrots" a fun and creative way to incorporate snack peppers into your Easter celebration, they're also a great way to get kids excited about eating healthy foods. So next time you're planning an Easter party or looking for a fun snack idea, give these snack pepper "carrots" a try!
Don't forget to PIN IT!
XOXO,
Kimberly Marie
