How to Make Zupa's Creamy Wisconsin Cauliflower Soup at Home: A Copy Cat Recipe

In the realm of comfort foods, soups hold a special place. They warm us from the inside out, evoke nostalgia, and often become a cherished part of our culinary repertoire. Among the plethora of soups out there, Zupas Wisconsin Cauliflower Soup tops my list and stands out for its creamy texture, rich flavor, and hearty ingredients.


I knew I had to recreate this soup at home and found that it was incredibly simple and ready in 30 minutes or less, putting this recipe at the top of my Easy Monday Meals list.




Deconstructing the Flavor:

At its core, this soup balances the nutty sweetness of cauliflower with the bold tang of sharp cheddar cheese. Additionally, aromatics such as onions and garlic provide depth, while cream lends luxurious richness to the texture. Understanding the components of the soup allows us to recreate the essence of the dish while adding our unique twist - did someone say "secret ingredient?"


The Recipe:

Creamy Cauliflower Soup

3 TBL olive oil

1 TBL minced garlic

1 TBL onion powder

1 head cauliflower, washed and chopped

5 cups chicken broth

16oz sharp white cheddar cheese, shredded

1 cup milk

1 cup heavy cream

1 tsp salt

1 tsp ground mustard

1/4 tsp nutmeg (*secret ingredient!)


In a large pot, heat oil. Add garlic and onion powder. Stir in cauliflower and saute until fragrant. Pour in chicken broth (may need an additional cup - enough to cover the cauliflower), bring to a boil. Turn heat to medium and cook until cauliflower is tender. About 15 minutes. Using an immersion blender, blend until smooth. Add in cheese, milk, cream and remaining spices. Heat through.


Serve topped with cheese, green onions/scallions and bacon. We topped ours with left over beef brisket and it was next level delicious!
