PUFF PASTRY WITH LEMON RICOTTA CREAM AND FRESH RASPBERRIES


1 package store bought puff pastry

Fresh raspberries


For the cream:

1 cup heavy whipping cream

1/2 cup powdered sugar

Juice and zest of 1 lemon

1/2 cup whole milk ricotta cheese


Cut puff pastry into desired shape. Bake as directed on package. While baking, make cream. Whip heavy cream until stiff peaks form. Add sugar and lemon with zest. Fold in ricotta. Once puff pastry has cooled, slice each pastry in half. Fill with cream and raspberries. Enjoy!!
