Easy Chicken Noodle Soup Hack
I love soup! Especially in the fall when it is so fun to do soup in bread bowls - comfort food at its finest. Although most homemade soups aren't overly complicated, I like to save time but still have that homemade feel. Enter - Costco chicken noodle soup. I personally think it's a little bland so I like to jazz it up. I throw in some extra spices like thyme and oregano, a little extra salt and pepper, maybe even some onion and garlic powder and it tastes just like homemade. Last night because we used bread bowls I added a little heavy cream and that took it to another level but was still SO easy!
Many of my favorite soups require one ingredient that is the same - carrots. Today I'm sharing how to cut those little cuties into PUMPKINS! My boys thought this was so cool and added a little extra touch of fun.
FIRST: peel and wash
SECOND: Make two slits running parralel down the carrot
THIRD: Make two additional cuts on a diagonal to the slits just made
FOURTH: Remove the excess
FIFTH: Chop and add to soup! (I sautéed my carrots in olive oil before adding to the soup as it was a pre-made soup and I didn't want hard carrots)
FINALLY:
Make it fun!! Serve it in a cauldron and dish up into bread bowls. Throw some mini pumpkins on the table and you have a festive Autumn dinner!
ENJOY!
